Do something extra special for Mom this Mother’s Day. Serve her a delicious breakfast along with a homemade basket of flowers.

Breakfast Parfait
(makes 1 serving)

  • ½ cup of your favorite granola, divided
  • ¼ cup plain, nonfat yogurt or cottage cheese, divided
  • ½ cup sliced strawberries, divided
  • ½ ripe banana, sliced
  • Sliced strawberries for garnish

  1. Place half of granola in parfait glass or glass bowl. Top with half of yogurt. Arrange half of strawberries and the banana over yogurt. Top with remaining granola, yogurt and strawberries. Garnish with sliced strawberries.
Apricot-Orange Cream Scones
(8 scones)

  • 2 cups all-purpose flour
  • 3 tablespoons sugar
  • 3 teaspoons baking powder
  • 2 teaspoons grated orange peel
  • ½ salt
  • ½ cup chopped, dried apricots
  • ½ cup white vanilla chips
  • 1 1/3 cups whipping cream
  • 1 cup powdered sugar
  • 2-3 tablespoons orange juice

  1. Heat oven to 400° F. Lightly grease cookie sheet. In large bowl, combine flour, sugar, baking powder, orange peel, and salt; mix well. Add apricots and white vanilla chips; mix well. Add whipping cream all at once; stir just until dry ingredients are moistened.
  2. On lightly floured surface, knead dough 6 or 7 times until smooth. Divide dough in half. Pat each half into 6-inch round; cut each into 4 wedges. Place 2 inches apart on greased cookie sheet.
  3. Bake at 400° F. for 10-13 minutes or until light golden brown. Cool 5 minutes. Meanwhile, in small bowl, blend powdered sugar and enough orange juice for desired drizzling consistency. Drizzle icing over warm scones. Serve warm.

Devonshire Cream

  • 8 oz. cream cheese
  • 12 oz. sour cream
  • Juice from 1 lemon
  • 2 teaspoons vanilla
  • 2 cups powdered sugar
  1. Blend all ingredients until smooth.

Bouquet of Flowers

  • 1 – 9” paper plate
  • Scissors
  • Stickers
  • 3 sheets contrasting colors construction paper
  • Pencil
  • Stapler
  • Small bunch of fresh or silk flowers

Directions:

  1. Put plate on a piece of construction paper and draw a circle around the plate. Cut out the circle. Repeat with a second sheet of construction paper.
  2. Fold both circles in half and staple halves together to form a heart shaped basket.
  3. To make handle for the basket, cut an 11”x1” strip of paper out of remaining piece of construction paper. Staple the handle to basket.
  4. Decorate the basket with stickers and arrange freshly picked or silk flowers inside.
